Following countless requests for Jonathan Straight’s Lupin Dip recipe, here it is!

Lupin Dip – Serves 8 on a mezze platter


1 cup Lupin Flakes

2 small cloves crushed garlic

20ml dehulled tahini paste

20ml wine vinegar

1 tsp lemon juice

60ml vegetable oil

½ tsp vegetable stock

½ tsp salt

10ml olive oil (for drizzling)


  1. Add Lupin Flakes to 3 cups of hot water and bring to boil. Boil for 3 minutes then strain.
  2. Place Lupin Flakes and all other ingredients in food processor and blend until smooth.
  3. You may need to add up to a ½ cup of water to achieve a creamy consistency.
Dip will thicken on standing.  If you you feel it is too thick, just add extra water and blend.

Serving Tip

Drizzle olive oil  over the top and sprinkle with paprika.
